Spiced Vegan and Paleo Mango Lassi Recipe {Gluten-Free, Refined Sugar-Free}

So it’s been so hot all week that all I’ve been able to think about are ice cold treats, and as a result I somehow had a very strong urge to have a mango lassi. I haven’t had one in years, and this lightly spiced vegan and paleo mango lassi recipe was super easy to throw together from the ingredients I had on hand. This refined sugar-free and dairy-free version turned out really smooth and refreshing, and made me reminisce on my pre-dietary restriction days when mango lassis, gulab jamuns, kulfi, and rasmalai were always an item not to be missed when going out to Indian restaurants (which used to be my favorite, by-the-way). So sharing the recipe here, in case anyone else missed their mango-lassi or in case you’re just looking for something to keep you cool and refreshed.

Spiced Vegan and Paleo Mango Lassi Recipe:

*Makes 2-3 servings

Ingredients:

  • 1 can full fat coconut milk
  • 1/2 cup non-dairy milk of your choice (I used unsweetened vanilla almond milk. Light coconut milk would work well for AIP)
  • 1/2 cup ice-cubes
  • 2 ripe mangos, peeled and pitted
  • 3 tbsp liquid sweetener of your choice (I used maple syrup)
  • juice of 1/4 lemon
  • 1 tsp pure vanilla extract
  • 1/8 tsp ground cardamom
  • 1/8 tsp salt
  • optional: tiny pinch of turmeric (for color)

Directions:

Blend all ingredients together in a blender and enjoy! Chill any leftovers and shake before consuming again if any separation occurs. It made an excellent breakfast drink the following day and I even poured some of the leftovers into popsicle molds to enjoy later.
